Are these dinners realistic on a weeknight?

Yes. The lentil bolognese, sheet-pan cod, and turmeric chicken thighs all clock in under 45 minutes of total time, with maybe 15 to 20 minutes of actual hands-on work. The stuffed peppers take about an hour total, but you can prep the filling on Sunday and bake them on Wednesday. Batch-cooking a pot of farro or quinoa on Sunday night cuts at least 20 minutes off most weeknight builds.

What about jarred pasta sauce, can I just buy a clean one?

Yes, clean jarred sauces exist, but they are the minority. Most brands add sugar, soybean oil, and modified starches even in 'organic' or 'no sugar added' versions. Scan two or three jars side by side and look for sauces with five ingredients or fewer: tomatoes, olive oil, garlic, salt, basil. Is salmon really worth the price?

What if I do not eat fish or meat?

All five concepts adapt to plant-based eating. Lentil bolognese is already vegetarian. Stuffed peppers are vegetarian as written.
